Get ready to flip some pancakes, mama!

Today, lots of people around the world celebrate Candlemas – a religious festival observed by Christians that falls midway between the winter solstice and the spring equinox (shortest and longest days of the year) – and considered by many as the beginning of Spring. In France, this holiday is called la Chandeleur, Fête de la Lumière, or jour des crêpes (translated as ‘pancake day’ – yum!).

At Sassy Mama, we think this is the perfect excuse to try and make these delightful and scrumptious golden pancakes – it’s for the kids, remember? We’ve got you covered with a fab crepe recipe from one of our own expert mamas…

Today we share with you this original French crêpe recipe. Actually this is THE recipe, the one that all your friends will ask for, the one that will bring memories to your kids. I’m warning you, this is pure sin!

When you are making the crêpe it is traditional to hold a coin in your writing hand and a crêpe pan in the other, and flip the crêpe into the air. If you manage to catch the crêpe in the pan, your family will be prosperous for the rest of the year.

Your destiny is in your hands (no pressure)!

Recipe for 30 crêpes 

  • 500g Flour
  • 100g sugar
  • 10g salt
  • 8 egg yolks
  • 4 eggs
  • 1L full cream milk
  • 200g unsalted butter
  1. In a salad bowl put the flour, sugar, salt, egg yolks and eggs. Mix together
  2. In a saucepan, pour 25cl of milk and add the butter. Heat until the butter is melted
  3. With an electric whisk start whisking together the butter and the milk and slowly add the remaining 75cl of milk
  4. Once the milk and butter are boiling hot (very important to get the right texture) add to the salad bowl with all the other ingredients. Mix together
  5. Leave to rest in the fridge for at least one hour
  6. Use high heat when cooking the pancakes
  7. Add the filling of your choice, or enjoy them plain with butter and sugar
