Annabel Karmel’s Bite-Size Favourites
Prep: 20 minutes (excluding freezing time)
Makes: 6 child portions
Ingredients
- 300g mixed frozen summer fruits e.g. raspberries, blackberries, blueberries, thawed at room temperature or heated gently in a pan or microwave
- 400g natural yogurt
- 200ml double cream
- 75g caster sugar
Method
- Puree and sift half the summer fruits.
- Stir the yogurt if it is set yogurt and lightly whisk the cream in a bowl until it forms soft peaks. Fold together the yoghurt, cream, caster sugar and the summer fruit puree.
- Freeze in an ice-cream machine, following the manufacturer’s instructions. When frozen but still with a soft texture, mix the remaining summer fruits with the remaining tablespoon of caster sugar and stir them into the ice cream mixture.
- Alternatively, spoon the ice cream mixture into a suitable container and put it in the freezer. When half frozen remove from the freezer and beat well until smooth, either with an electric hand-held whisk or in a food processor, to break down the ice crystals. Mix the rest of the fruit with the tablespoon of caster sugar and stir in the yoghurt ice cream. Return to the freezer and stir one of two more times during the freezing process to get a smooth ice cream.

Makes: 2 small portions
Ingredients
- 115g strawberries (3 large or 5 medium), hulled & quartered
- 1 wedge of watermelon or cantaloupe, seeds & rind removed & flesh cubed
- ½ small banana
- 3 tbsp strawberry yoghurt
- 2 tbsp orange juice
- 1 tsp clear honey
Method
- Put everything in a blender and blend until smooth or your desired consistency.
- Pour into a glass with ice and serve straightaway.
- If there is smoothie left over, it can be kept in the fridge to drink later.

Makes: 8 lollies
Ingredients
- ¼ watermelon
- 60g raspberries
- A little icing sugar to taste
Method
- Cut the flesh from the watermelon and remove the seeds. Blend the watermelon and raspberries together. Strain through a sieve and stir in the icing sugar to taste. Pour into lolly moulds and freeze.
