Healthy & nutritious salads have been a major part of the Lime Tree Café & Kitchen menu since they first opened their doors in Jumeirah in 2001 (yes mamas – these guys have been around a while and they know their stuff!). As well as many gluten free offerings, to run alongside their HACCP certified gluten free bakery, they also prioritize dairy free options & over the past year have introduced paleo salads. One that’s caught our eye (and got our mouths watering?) – the Raw Cauliflower Couscous with Organic Kale Cranberries & Walnuts. YUM!
Raw organic kale – popular antioxidant-rich superfood, high in Vitamins A & K; Cauliflower couscous – paleo, low-carb alternative to grains, packed with Omega-3 & Vitamin C, & Red Cabbage – this detoxifying vegetable also gives your immune system a boost. Sounds great, right?

Raw Cauliflower Couscous with Orangic Kale Cranberries & Walnuts (V, VG, P, DF, GF) – Serves 6
800g Cauliflower, blanched & grated
250g Raw Red Cabbage, thinly sliced
170g Raw Organic Kale, torn into small pieces
40g Spring Onion, finely sliced
150g Dried Cranberries
100g Walnuts, roasted & chopped
Served with an extra virgin olive oil & citrus vinaigrette.
Mix everything together – and enjoy!
